San Blas cakes



Today is San Blas day and all the windows of the patisseries from the Basque Country are covered with San Blas cakes. It is a sweet, slightly dry with a delicious anis aroma dought, glazed with a flavored meringue and a little chocolate.
  • 500 gr flour
  • 2eggs.
  • 2 tablespoons sugar
  • 125 ml. extra virgin olive oil
  • 2 tablespoons anise
  • For the glase:
  • 4 egg whites
  • 400 gr. sugar
  • a dash of anise
  • 50gr dark chocolate
Put eggs, sugar, aniseand oil in a large bowl. Incorporating flour (slowly) and kneaded with the hands until get a homogeneous mass. Stretches the dough with a rolling pin to get a rectangle of a centimeter thick. cut circles of 5 cm in diameter.Place them on baking paper and enter it in the oven (pre-heated) to 165 ยบ C for 20 minutes. Leave to cool. Bate clearly a blender with electric rods and incorporates the sugar while beating. Add the anise and continued beating until a thick meringue. Pint one side and let it dry. Melt the chocolate and decorate the cakes.
